Grandma’s Zucchini Bread

I absolutely love when zucchini season rolls around… I don’t know that I’ve ever even needed to buy one, thanks to generous family and friends!  While I love grilled zucchini (just brush on some oil, sprinkle with salt and pepper), my absolute favorite is zucchini bread.  I used my grandmother’s recipe – it’s the one my mom used growing up, too, and if I may say so myself… it’s the best :-)

And because I love you all, and want to share this wonderful thing, here is the recipe:

3 eggs
2 c. sugar
1 c. oil (I use canola)
2 c. grated zucchini
3 t. vanilla
3 c. flour
1 t. salt
1 t. baking soda
1/4 t. baking powder
1 c. nuts (optional – I omit)
3 t. cinnamon

Mix all ingredients.  Bake at 325 degrees for 1 hour.  Makes 2 loaves.
And in all seriousness, that’s what my recipe card says… “Mix all ingredients”.  How simple is that?

    I love Zucchini bread too…but am not lucky enough to have any given to me. =( I have to buy it.

    I haven't made any baked items from ours yet, we either sautee with garlic/butter, or grill with italian dressing or sprinkle garlic salt on it. Either way, it's a great veggie! Thanks for sharing your recipe!

  4. I have to say that although I am not a big fan of Zucchini bread, you recipe sounds yum…and I would leave out the nuts too. But I'm not a big fan of Banana bread either.

    My family on the other hand does love Zucchini bread, so I guess I'll have to try your recipe out on them.

    My MIL makes Rhubarb bread, it is moist and tangy, I will pinch off of that occasionally.

    I just made a fabulous zuchini cake from bon appetit magazine (it had a cream cheese frosting, but i used goat cheese because i prefer the flavor). Thanks for posting your recipe!

    I actually have a question for you about something totally different–i saw you had projects on upcycling sweaters and I'm curious about trying this type of thing out. Do sweaters have to be felted to keep them from unraveling? Are there any online tutorials you'd suggest?

    noe –

    It really depends on the type of sweater you want to use. The only sweaters that can be felted (that I know of) are wool – aim for 50% to 100%. I've done this type of felting by just washing (I used warm water) and drying the sweater. You can also felt it by needle, but this would be much more time consuming and I'm not familiar with the process.

    For my most recent upcycled sweater tutorial I didn't do anything to the sweater at all. It was 100% cashmere and I just used it as-is! Easy!
